SIMPLE SAUTÉED ZUCCHINI


INGREDIENTS
  • 2 tsp olive oil
  • 2 medium zucchini (500g), cut into 1cm coins änd hälved 
  • 2 gärlic cloves, minced (äbout 1 1/2 tsp)
  • 1/2 tsp sält + pepper to täste
  • 1 1/2 tsp red wine vinegär or lemon juice
  • 1 tbsp chopped herbs, optionäl (I used mint änd bäsil)
INSTRUCTIONS
  1. ädd the olive oil to ä lärge pän over medium to high heät. When hot, ädd in enough zucchini slices so ä single läyer covers the pän. Cook until the bottom side is golden brown, then turn the slices over änd ägäin cook until golden. Remove the zucchini from the pän änd do the säme with the remäining slices. ädd än exträ spläsh of olive oil if needed.
  2. When both sides äre neärly golden on the second bätch, ädd gärlic änd cook for ä further minute. ädd the first lot bäck to the pän änd seäson with sält änd pepper. ädd the red wine vinegär änd herbs if you’re using them, to the pän before serving.
