Sweet and Sour Tofu (Vegan, Gluten-free)

  • 9 oz tofu cubed
  • 2 tbsp tamari
  • 1/2 tsp pepper
  • 3 tbsp arrowroot powder
  • 1/2 large red onion chopped
  • 1/2 medium orange bell pepper chopped
  • 1/2 medium red bell pepper chopped
  • rice, to serve
  • spring onion, to serve
For the sauce
  • 1 cup orange juice
  • 2 tbsp maple syrup
  • 2 tbsp tomato paste
  • 2 tbsp rice wine vinegar
  • 2 tsp cornflour
  1. In a mixing bowl, mix together the tofu, tamari and pepper. Set aside for 15-20 minutes. Meanwhile, prepare the sauce by stirring together the orange juice, maple syrup, tomato paste, rice wine vinegar and cornflour.
  2. Add the arrowroot powder to a sandwich bag, followed by the tofu. Shake to ensure that the tofu cubes are evenly coated. 
  3. Cook the tofu cubes in a non-stick frying pan for around 1-2 minutes on each side, working in batches if necessary to avoid overcrowding the pan. If you do not have a non-stick frying pan, you may have to use a little bit of oil or cooking spray. Remove and set aside.
