Jamie Oliver’s Fluffy American Pancakes

  • 1 cup plain flour
  • 1 tsp baking powder
  • 3 eggs
  • 1 1/4 cups full-fat milk
  • 1/2 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • a pinch salt
  • 2 tbsp vegetable oil
  • to serve: walnuts, bananas and honey


  1. In a large bowl, sift the flour and add the baking powder and cinnamon.
  2. Separate the egg yolks from the egg whites.
  3. Beat the egg yolks lights, pour over the milk and give a good stir.
  4. Combine the flour mixture with the milk and egg yolk and mix well with a silicone spatula, you will get a thick batter.
  5. Next, beat the egg whites with a pinch of salt until it forms stiff peaks.
  6. Fold it in the batter, add the lemon juice and mix well to combine.
  7. Heat up a non-stick frying pan, add one or two drops of oil and use a ladle to pour over some batter.
  8. Cook on both sides until golden and firm to touch, it should not take longer than 1-2 minutes once the pan is hot.
