HOW TO MAKE SUGAR-FREE LEMON CURD


INGREDIENTS
  • ½ cup lemon juice (fresh or from a bottle)
  • 5 egg yolks (yolks only)
  • ¼ cup erythritol
  • ½ tsp liquid stevia
  • Dash of salt
  • 1 stick of unsalted butter (salted is fine)
INSTRUCTIONS
  1. Separate your egg whites from egg yolks and add your yolks to a medium saucepan. You will not be using the egg whites.
  2. To the saucepan with the yolk, add your lemon juice, erythritol, stevia, and salt, and whisk until mixed. Then turn the burner on over medium heat.
  3. Add the stick of butter (whole or cut into pieces) to the saucepan and let melt. You can slowly stir the mixture to keep from boiling, but don’t whisk just yet.
  4. Once the butter is melted, begin whisking vigorously until the mixture thickens. You can test if its thick by dipping a spoon in it and seeing if the mixture coats the spoon. Do not let the mixture boil.
