Coconut Shrimp

  • 1/4 cup cornstarch
  • 1 tsp salt
  • 2 egg whites
  • 1 cup flakes sweetened coconut
  • 1/2 pound large raw shrimp
  1. In a shallow bowl, combine the cornstarch and salt. 
  2. In a second shallow bowl, add the egg whites
  3. In a third shallow bowl, add the coconut
  4. Working with one shrimp at a time, dredge in the cornstarch mixture, then egg whites, then coconut. 
  5. Add shrimp to air fryer basket without over-crowding
