Weight Watchers Lasagna Skillet
Smartpoints = 5 per serving
Makes 6 (3/4 cup) servings
Ingredients:
- 4 ounces (about 8 noodles) whole wheat lasagna noodles
- 1 pound 95% lean ground beef
- 1 (28 oz) can of crushed tomatoes
- 1 tablespoon olive oil
- 1/2 cup chopped onions
- 1 1/2 teaspoons minced garlic
- 1 (15 oz) can tomato sauce
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon of this seasoning blend
- 1 cup fat free ricotta cheese
Directions:
- In a skillet over medium high heat, add olive oil, onions and garlic. Saute until fragrant.
- Add ground beef. Break meat apart and cook until no longer pink.
- Break up noodles into 2 inch pieces and add to meat.
- Pour crushed tomatoes and tomato sauce into skillet, covering noodles.
- Bring to a boil, then reduce heat to medium low and cover.
- Cook until noodles are al dente, or about 25 minutes.
- Add Italian seasoning, salt and pepper to taste, and Parmesan cheese. Stir.
- Cover and let simmer for 5 more minutes.
- Remove from heat, serve immediately with one tablespoon of fat free ricotta cheese (0 points).
- Sprinkle chopped basil over the top
